Granola.  Who doesn’t like it?

Baby eaters, that’s who.


So it is reasonably logical to assume that everyone is going to go ga-ga (pun intended) for this one.

Behold, bitches.

Damn, my blog is getting edgy.

Coconutty Granola


  • 3 c. rolled oats
  • 1/4 c. whole wheat flour
  • 3/4 unsweetened coconut flakes
  • 3/4 c. sliced almonds
  • 1/2 tsp. cinnamon
  • 1/2 c. maple syrup
  • 1/3 c. safflower oil (I used canola)
  • 1 tsp. vanilla

Mix dry ingredients (oats, flour, coconut, almonds, and cinnamon) and wet ingredients (maple syrup, oil, and vanilla) in separate bowls.  Then combine together until the dry ingredients are coated evenly.  Bake at 300 degrees F for about 30 minutes, stirring the mixture around occasionally.

I put a bit of this stuff in a custard cup with some unsweetened vanilla almond milk.  It was nomtastic.
